The Lye Cross Farm Non-GMO range consists of three products – Sharp Cheddar, Red Leicester and Double Gloucester. These are all handmade using the traditional technique of ‘Cheddaring’, like all the cheese that we produce, but we have changed the way that we look after our herd at Regilbury to ensure that these cheeses are Non-GMO Project Verified.
The Non-GMO Sharp Cheddar has a full flavor and firm silky texture, and is typically matured for 9 months to achieve the desired flavor and texture profile.
The Non-GMO Red Leicester has a delicate sweet flavor and is a distinctive red color. As a relatively young cheese, this Non-GMO Red Leicester will typically be matured for 3-4 months.
Another cheese that has a young age profile is the Non-GMO Double Gloucester. With a typical age of 3-4 months, this cheese has a unique orange color and a creamy mellow flavor.
Currently only three of our products are verified by the Non-GMO Project. If you are ever in doubt, ‘look for the butterfly’ on the packaging to be sure that the product you are interested in is Non-GMO Project verified.
